Предисловие
Учебное пособие предназначено для студентов, обучающихся по специальностям сервиса, коммерции и менеджмента коммерческого факультета. Оно рассчитано на то, что студенты владеют лексическим и грамматическим материалом в объеме первого курса. Цели пособия:
(1) ознакомить студентов, завершающих изучение английского языка в институте, с лексико-грамматическими особенностями функционального стиля литературы по менеджменту, а также гостиничному и ресторанному бизнесу;
(2) обучить студентов различным видам чтения и привить им первичные навыки перевода на русский язык оригинальной литературы, тематически связанной с их будущей специальностью;
(3) способствовать дальнейшему совершенствованию речевых навыков и умений студентов в данной, профессиональной для них сфере коммуникации.
Указанные цели пособия определили его построение, отбор языкового материала, систему и виды упражнений.
Пособие состоит из 12 относительно самостоятельных и закон-: разделов (Units), охватывая, в частности, следующие темы:
• Классификация основных типов отелей в современных условиях глобализации рыночной экономики и конкуренции на мировых туристических рынках.
• Управление (management) отелями.
• Структурные подразделения (divisions) современного отеля.
• Типичные проблемы, возникающие в процессе работы, и рекомендуемые способы их решения.
• Должностные обязанности руководителей как высшего, так и низшего звена:
• управляющего отелем,
— шеф-повара ресторана,
— управляющего баром и др.
• Организация работы ресторанов и баров при отелях.
• Взаимоотношения работников отелей и ресторанов с клиентами и со своими коллегами. Структура всех разделов является однотипной и построена по единой схеме:
1. Основной текст, содержащий постановку той или иной актуальной проблемы, заголовок которого является названием всего раздела и определяет его тематику. Отобранные из оригинальных источников, эти тексты дают достаточно полное представление о гостиничном и ресторанном бизнесе и его нынешнем состоянии (разумеется, лишь в рамках, ограниченных как объемом пособия, так и его основной целью — обучением студентов именно английскому языку, а отнюдь не такой многоплановой самостоятельной дисциплине, как «Менеджмент в сфере гостиничного и ресторанного бизнеса»).
В ряде случаев по методическим соображениям тексты были подвергнуты незначительному сокращению (иногда — дополнению) и некоторой перекомпоновке, при сохранении, однако, общей структуры данного источника.
Все основные тексты каждого раздела сопровождаются детальным перечнем незнакомых слов и терминов по данной тематике с их контекстуальным переводом на русский язык, что не отменяет, разумеется, необходимости обращения как к общим, так и специальным англо-русским словарям.
2. Комплекс упражнений (предтекстовых и послетекстовых), направленных на накопление, расширение и усвоение словарного запаса студентов, а также на развитие и закрепление их речевых навыков и умений.
3. Дополнительные тексты (рубрика Case Study) с описанием конкретной ситуации, иллюстрирующей практическую реализацию тех или иных экономических или управленческих проблем и рекомендаций, изложенных или затронутых, как правило, в заглавном тексте данного раздела. Взятые из современной периодики из американских и британских источников за последние пять лет 1999— 2004 и представляющие в силу своей актуальности познавательный интерес, эти материалы призваны создать у студентов дополнительную мотивацию к изучению английского языка и стимулировать их речевую деятельность, активизируя ее в ходе самостоятельных и аудиторных практических занятий.

МЕТОДИЧЕСКАЯ ЗАПИСКА
Структура каждого раздела (Unit) определяет как последовательность, так и саму методику работы с пособием.
Предтекстовые упражнения (рубрикаPre-reading), направленные на понимание интернациональных слов (в том числе, и так называемых «ложных друзей» переводчика), вычленение и усвоение значений словообразовательных моделей и аффиксов развивают у студентов языковую догадку, приучают их выделять в тексте ключевые слова и предложения, которые могут служить опорой для его первоначального беспереводного понимания.
Основной текст (рубрика Reading) предназначается, в первую очередь, для изучающего чтения, детального лексико-грамматического анализа и усвоения активного вокабуляра по теме, а также поискового чтения — нахождения в тексте ответов на предваряющие его вопросы.
Послетекстовые упражнения (рубрики Vocabulary Focus и Comprehension ) включают в себя, в частности, задания на:
• определение и соотношение синонимов и антонимов;
• истолкование значения английского слова через его определение или объяснение на английском же языке;
• заполнение сделанных в предложении пропусков словами или словосочетаниями из предлагаемого списка;
• составление (или поиск) ответов на вопросы по тексту;
• определение верных и неверных по смыслу предложений и их комментарий и др.
Такие упражнения способствуют более детальному пониманию текста в целом, а также первичному формированию навыков говорения по данной теме, которые затем поэтапно совершенствуются, переходя на стадию умения, в ходе выполнения собственно речевых упражнений (рубрика Discussion):
• беседы или монологи на заданную тему с опорой на ключевые лексические единицы;
• передачи основной мысли отрывка текста одной-двумя фразами;
• обсуждения с партнером предложенной преподавателем или выбранной самими студентами темы;
• краткого изложения содержания текста и т.п. Предлагаемый комплекс упражнений ставит своей основной целью свести к минимуму трудности восприятия данного типа текстов и, в конечном счете, подготовить студентов к беспереводному пониманию оригинальной литературы по менеджменту, а также гостиничному и ресторанному бизнесу.
Перечни предназначенных для запоминания английских слов и терминов с их контекстуальным переводом на русский язык (Vocabulary notes) призваны облегчить работу студентов над конкретным текстом, однако, не являясь исчерпывающими, они не могут и не должны заменять собою общие и специальные словари, необходимые как для работы с данным пособием, так и для чтения любой оригинальной литературы по этой тематике.
Работу с текстами из рубрики Case Study, которые тоже сопровождаются подробными списками слов и их контекстуальными русскими эквивалентами (Vocabulary notes) или лексико-грамматическим комментарием (Notes), рекомендуется проводить после изучения основного текста данного раздела. Учитывая большое количество потенциально незнакомых слов и даже неологизмов, содержащихся в этих текстах, взятых из текущей американской и британской периодики, студентов следует готовить к обсуждению таких материалов особенно тщательно (например, задав их для выполнения в качестве домашней работы или предварительно семантизировав совершенно незнакомую или сугубо профессиональную лексику на самом занятии). Помимо предлагаемых в пособии вопросно-ответных упражнений, ролевых игр, работы в малых группах и ряда прочих заданий, преподаватель может разнообразить формы работы с текстами из этой рубрики в зависимости от уровня подготовленности группы. Так, вполне возможно использовать традиционные элементы обучения просмотровому и поисковому чтению, добиваясь от студентов общего охвата содержания текста или нахождения в нем ответов на дополнительные вопросы, поставленные преподавателем устно.
