Appendix Restaurant Manager Opening and Closing Procedures Checklist

Opening Procedures Checklist

  1. Check out the restaurant keys from Security.

  1. Pick up the Manager’s bank and make sure sufficient change is available.

  1. Turn off call forwarding on the restaurant telephones.

  1. Pick up mail and Manager’s Log Book.

  1. Adjust lights and window blinds, turn on the music.

  1. Assign Servers numbers on POS side work and stations.

  1. Check supply of paper & ink ribbon for the POS printers.

  1. Issue guest checks to Servers (if applicable).

  1. Inspect Cashier Station for supplies including credit card vouchers, credit card imprinted date, and “Cash Only” list.

  1. Review daily schedule of events and the VIP list, packages, groups.

  1. Check menus (including wine lists) and change "fresh" sheets.

  1. Obtain newspapers and display on appropriate table.

  1. Verify availability of clean linen/rags and soiled linen hampers.

  1. Perform Daily Roll Call.

  1. Inspect all stations and side stands before service.

Closing Procedures Checklist

  1. Check Servers out.

  1. Verify that all assigned side duties have been performed person.

  2. Run the appropriate Server reports on the POS.

  1. Run revenue reports on the POS.

  1. Complete logbook entries.

  1. Place storeroom orders for liquor, wine, and condiments or dry goods.

  1. Check staffing for next shift, making any corrections to forecast as necessary.

  1. Check that equipment is cleaned and turned off, including:

a. coffee maker

b. coffee warmers

c. bread drawers

d. juice machine

e. toaster

  1. Store seating chart and reservations book in the appropriate location.

  1. Count and lock all silver items, following up on discrepancies.

  1. Lock wine cabinets.

  1. Inspect the bar condition and security.

  1. Inspect the tables that are re-set for the next shift.

  1. Inspect the restaurant including booths and chairs, for stains or damage, and report to maintenance.

  1. Ensure that all soiled dishes and linen have been put in their proper place.

  1. Forward telephone lines to hotel operator.

  1. Turn off the music and lights and lock the doors.

  1. Turn in the restaurant keys to Security.
